CARROT CAKE BALLS: 

When I found this 10 minute recipe, I nearly died because carrot cake is one of my FAVORITE desserts which I had to give up with my intolerances… Well not anymore!

Introducing the lean, mean, vegan, raw, GF carrot cake balls!

1 cup carrot (thinly sliced)
1/3 cup dates (packed)
1/4 cup walnuts (minced)
1/4 cup raisin (dark)
1/2 tbsp ground cinnamon
1/4 tsp ground ginger

Just put it all in a food processor or blender. Then make into balls and cover in coconut shreds by rolling it around in a bowl.

Put in a tupperware on parchment paper and store in the freezer. 

So yummm.
