LEBANESE RED LENTIL SOUP

Been feeling homesick lately so I decided to bring Beirut to me by making this super easy lentil soup recipe. It’s great in the winter but you know since it’s raining in NYC today, might as well be.

Sautee 1 sweet onion, 3-4 garlic cloves and a handful of cilantro in some olive for 5 mins. You can add in a few carrots as well. Please don’t do baby carrots. They aren’t real and will make this taste awful.

Add in 4 cups of veggie stock, 3 cups of water and 3-4 cups of red lentils (best if soaked an hr before but not required AT ALL).

Cook for 30 mins. Add salt, cumin and cayenne to taste before, after, during, whenever you please, really.

Now you have enough to feed yourself, your roommate and the neighbors for the next week.
