Roasted Asparagus with Tofu Scramble

No time for dinner? Whip up something simple & light to keep you energized as you get through the Monday Madness. 

ASPARAGUS: Throw in a casserole. Add olive oil, sea salt and some garlic powder. Roast at 375 for 10-15 mins (or until desired tenderness)

Tofu Scramble: Chop some red cabbage, throw in a pan. Add in 1/3 box of silken tofu. Add some soy/tamari and toasted sesame oil. Grate a little fresh ginger. Stir for 5 minutes.

*If you’re needing more carbs, add a side of precooked quinoa or brown rice to the scramble.
