ACORN SQUASH

MY FIRST DATE WITH ACORN SQUASH

Tonight, I made acorn squash with maple syrup and brown rice miso stirfy veggies! 

THE DIRECTIONS:
– Cut acorn squash in half, drizzle with maple syrup. 
– Put in the oven for an hr at 400.
– The last ten mins, start to make your stirfy veggies. You can mix anything you have in your fridge and stirfy in miso paste, olive oil, garlic and shallots. 

The combo of the salty miso and the maple syrup was ABSOLUTELY HEAVENLY!

This was my first time trying acorn squash. Dare to try new things! It’s like going on a first date! It could go terribly wrong but if it goes right, damn was it worth it 

NUTRITIONAL VALUE:
Acorn squash is an excellent source of vitamin A, vitamin C and beta-carotene. It is also a very good source of thiamin, vitamin B6, potassium, magnesium,and manganese, and a good source of iron.

Next time, I would cut out the carrots and minimize the maple because the combo was quite sugar-filled (…but oh-so-delicious!)
